Vannillin has been available since the 1970's. Before that true vanilla flavor was expensive and decadent. It is a now a super cheap favoring, chemically identical to the main flavor extracted from real vanilla beans. On the other hand, there are some other flavors in extracted vanillas that can give it a more pleasant and complex flavor.

Because it's the original. For example, some ice cream flavors are just some flavoring added to vanilla.

It makes sense since vanilla is kind of like salt in that it blends into other flavors very well by enhancing them even when you can't taste the vanilla/salt itself. It makes it sort of a blank canvas, which is a great example since canvas' are also horribly overpriced but very 'bland'.

Vanilla in the sense of bland I'm pretty sure came around because of the boom of vanilla in vanilla flavored extract.

Because it's super common, pretty much no one dislikes it and it works in pretty much anything. Bake goods, candy, food, coffee drinks, protein powder, scented candles, ice cream, perfume, and you can just keep going. Vanilla must be the absolute most common flavour/scent of them all.
The epitome of basic.
