Been several times, want to be about 1/2 way between Bloomsburg and NYC. So far I identified stroudsburg and Jim Thorpe. I like a walkable town. Any others I should be looking at? Thanks!

Honesdale and Bloomsburg are nice if you dont mind a rural small town atmosphere. Very charming laid back, and generally quiet towns that still have local events, parks, and biking trails.
I would suggest looking in Scranton, Hawley, Forest City, Factoryville, and Pittston also.
Pittston and Scranton are more urbanized and have larger downtowns and more young people, though the traffic has been getting worse. The others are small rural towns but still walkable with main streets and a handful of shops and businesses.
Stroudsburg and Jim Thorpe are pretty nice but a bit touristy. Good luck, and also prepare yourself for winter because NEPA is gloomy, cold, gray this time of year. Make sure to get some vitamin D.
When I think of nature, I don’t think of numerous gated communities and out of state summer homes.

Id avoid the Pocono’s then.
My friend lives in Jim Thorpe and she absolutely loves it there. My wife and I also love it there. Highly recommend it, for sure.

Jim Thorpe is pretty but it's a popular tourist attraction, traffic is moderate to snarl Friday, Saturday and Sunday, year round. Even when there's bad weather there's a ton of people poking around.
I lived on Broadway Street for 9 months, enjoyed it, it doesn't have enough shops in town for everyday needs. I loathed the people parking in my assigned parking and having to park on the other side of town.
I second Honesdale .
Milford on the NY-PA border. Walkable town. Basic necessities. Can lean “cute”. Technically commutable to NYC (but a little far for most).

Also— if okay with a little south of NEPA- Easton-Nazareth area.

Delaware water gap is a neat little town
Love that area, hiked the trails there. Big fan!
Stroud is garbage, unless you’re a homeless druggie living on the tracks by Walmart.
