I get the feeling that once 777 McCarter is open and considerably rented out, that Gateway will follow suit and extend its hours -- or at least the demand will increasingly be there for it

Hope you’re right but still crappy to have this happen. If your connected to a transportation hub you should be open till atleast 10pm

None of the food places adjacent to 1180 are open past 6pm, aside from Burger King
