I will be in Newark for about an 8 hour layover on a Saturday night. Is there anything fun to do around the airport before I have to be back on a plane?

What do you like to do?
I second Casa de Paco and drinks in ironbound. THIS IS THE WAY friend
You will be a short train ride to lower Manhattan
EWR is half in Elizabeth, Nj so if it’s your thing, Jersey Gardens Mall and IKEA are close by. Jersey city has downtown nightlife and view of NYC. Manhattan if you’re not exhausted.

What time are your flights, and are they domestic or international?
Come to the ironbound and eat Brazilian/Portuguese food. It’s only a short train ride to penn station in Newark from the airport, and the restaurants are just blocks away from Penn station.
Newark Local Beer
Walk around Clinton Ave some great spots to eat and hang out there
Most go to Jersey Gardens mall ,snd get some good shopping in before they leave . Brazilian / Portuguese / Spanish food around Ferry Street
1&9 billiards and entertainment. It’s a pool hall on 701 Spring St., Elizabeth it’s right off the 1&9 and literally 4 minutes from Newark airport same side as the airport and also there’s food places right next to it and across the highway there’s a royal fried chicken food is the bomb. Shooting pool and watching the games while getting something to eat just safe is bad being at that place is literally next-door neighbors to the airport.
It's worthwhile to just hang out in the ironbound. You can uber for like $15 or take the train. Ferry st is interesting.
Third for casa d’paco!
International
I really like exploring but I’m worried that I’ll have to deal with rush hour on a Saturday night if I take transit/a taxi
If it's international, I wouldn't stray too far from the airport and since you said "Saturday" night, I don't think some places may be open that late.
You could check out a bar in the Ironbound or Elizabeth, or maybe see if there's a 24 hour diner nearby for a quick bite (There's Andro's on Ferry and Merchant)

Hobby’s Delicatessen and a drink or three at McGoverns. Get some great small plates at casa de Paco. Not a ton of time for a layover to explore.
