Grand Theft Auto has excellent soundtracks. I like the hardcore station in GTA IV especially. Love me some Agnostic Front.

GTA San Andreas got me into Jerry Reed and subsequently into country music. I'd never figured myself for a country fan until I played. Great games, awesome soundtracks.

Assuming you mean a licensed track, I'd have to say "Cliffs of Dover" from Guitar Hero 3.

If you mean something original for the game, the song that gives me the most intense emotional response is "Giselle" from The House in Fata Morgana.

Not sure if it had a soundtrack but there was a song in Bioshock by Henry Hall called Hush hush hush. It was pretty creepy in game.
