Ha! I bought the Keychron V1 with Unknown keycaps a day or two ago. Plan on putting Kailh Speed Bronzes in mine. I'm pretty new to the mech world and this will be my first board with a knob. What can you do program the knob for other than volume?

I am not sure. My board is at work so the volume is perfect for me. There is a guide in the box to set up QMK.

I’ve set up the knob for screen brightness and rgb brightness in the 2nd layer of my Q1.
You can also link it to pretty much anything that other key can do
