Every time I see something like this, or a JSON formatter, etc I get to wondering whether or not the signal to noise ratio is too low for it to be an effective honey pot

If by honeypot you mean to imply that this website would collect some data: It doesn't. All data processing is done in the user's own browser and anyone can confirm this to be the case by analyzing the JavaScript of the page. This is also clearly stated in the website.

I’m not saying your website is storing user entered text, I’m saying it’s a bit dumb for users to trust that random websites are not. “Clearly stated on the website” isn’t actually a great reason to trust it. Yes, I could look through the code to make sure.

It's literally open source. If you don't trust it, you can review it. Unlike most things people run on their computers.

I understand your point, but maybe you should go make that point with something else, that is actually suspect in regards of privacy.
This is open source, no data is sent anywhere, there is a clear privacy policy in place in the website, the author of the website is clearly indicated and it doesn't even use any adtech tracking spyware for website statistics. Literally everything about this website is made with privacy first.
