They haven’t a clue what they are doing. FIRE THEM NOW OP!! Any professional would have put new drywall over the old textured surface. They probably didn’t even have a stud finder. Absolutely nothing but wasted money is what you’ll have with these schmucks.

Man, So long as that original ceiling isn't falling down, you don't even need to use 3/4 drywall, Laminate with 1/4". This is honestly a stupid easy job that is kinda hard to screw up. WTF was going on here?

Given how uneven the ceiling looks I would have torn down the old drywall and replaced.

Old ceiling is uneven cause it was probably installed with lathe, plaster and nails. Screwing drywall into the joists will securing it all and be a lot more flat plus no demo. 1/4 inch will do.

Hmmmmm not really. Tape off open doors with 4 mil plastic, wear a tyvek and p100, seal demo in trash bags, clean up.
