I'm trying to measure how round/curved the edges of a phone and phone case are in order to complete a 3D design. How are these metrics usually measured? Thank you

Well for pipe bending with a 90 degree bend we draw line out along each edge of the pipe until it the lines intersect. We measure the distance from the start of the turn to the intersect lines amd that gives us the radius of the curve

The “tightness” of a curve is measured in “radius of curvature”.

Use a fine toothed profile gauge, then scan/square-on photo the gauge, then trace with curves in your cad package.

Radius gauges in a machine shop environment.

Less precisely, you can press the profile into clay, and then see which drill bit fits that shape best.

In manufacturing this is always specified as a radius callout. So half your drill bit diameter if you do that.
