Looking for advice or guidance on fixing this annoyance.
We have a standard 1980's era countertop (Formica over particle board), and the wood screws that were anchoring our dishwasher both stripped free.
Any way to rectify this without involving changes to the countertops?

It depends upon the condition of the particle board, but longer and thicker screws would be my first inclination. If the particle board is too torn up, you can fill it in with an epoxy wood filler and screw into that after it sets.
