I was thinking that an important part of BIL is being able to repair/upgrade your devices. Like, I'm buying a sewing machine and then after 2 years a gear is broken and I need to replace it. If I built the machine myself, it would be much easier for me to replace the gear since I have all the instructions about how to put all the pieces together.
But I've failed to find any such products/instructions. I know that this used to be a thing, so is it just that this approach is lost or only me failing to do the right search?

You're asking for a blueprint for a sewing machine and a description of each of the parts so that you can assemble a sewing machine from its individual parts.
Maybe the keyword is assembly instructions?
Although I'm doubtful that those are available to the general public. You might be able to get a copy from a service technician or repair org.
I don't think most companies expect their customers to assemble critical components and still offer a warranty.
The general population struggles with reading IKEA furniture instructions.
