This happened to me when shopping for my new car a few years back. I was all set on an SUV, and at the last second made the switch to a luxury sedan. I like the size and look of large sedans. I do think having a crossover/true SUV for extra cargo space is very useful though.

100% more likely, it is more fuel-efficient on urban environments and more stable on the highways.

Not very. I find the SUV/XO form factor much more convenient - and, these days, you don't sacrifice much for performance or comfort.
